In my open kitchen, we’ll transform simple ingredients into something rich and satisfying, uncovering the techniques, flavors, and traditions that make this dish unforgettable. • We’ll start with a welcome meze, where I’ll share how moussaka has evolved from its humble roots to today’s interpretations. • You’ll slice, saute, and layer as we prepare the dish’s foundation: eggplant, potatoes, and a perfectly seasoned meat filling. • I’ll guide you through making a light, creamy bechamel sauce, the signature finishing touch. • While the moussaka bakes, we’ll prepare a traditional horiatiki salad, and I’ll show you how to balance its bold, fresh flavors. • Finally, we’ll sit down to enjoy your handmade meal, with tips on plating, pairing, and bringing authentic Greek flavors into your own kitchen. You’ll leave not only with the skills to re-create these dishes but also a deeper appreciation for the flavors and stories that define Greek cuisine.

Become an olive oil sommelier for a day and learn the art of olive oil appreciation from a fourth-generation olive farmer and certified taster. • We’ll meet at the 2,500-year-old Pisistratus Olive Tree, believed to be one of the oldest olive trees in the world, and talk about the rich history of olive oil. • Next, we’ll sit down at a nearby restaurant to taste a selection I’ve curated of premium olive oils from all over Greece. • I’ll help you evaluate each oil by sight, smell, and taste. You’ll learn to distinguish flavor profiles and how to pair the oils with Greek culinary staples. You’ll leave knowing how to identify high-quality olive oil, and with a small bottle of premium oil to take home to remind you of your time in Greece.

Join me for a flavorful journey into the world of Greek beekeeping and gastronomy. I’ll share the rich history of Greek beekeeping, a tradition my family has upheld since 1935, brought to life with artifacts and stories from our heritage. • We’ll start with a honey and olive oil tasting at my family’s Melira shop, sampling eight rare monovarietal honeys like carob, heather, and thyme and olive oil from our olive groves . I’ll share stories about how we relocate beehives to areas with specific flowers and plants, and you’ll enjoy cutting and tasting fresh honeycomb . • Next, we’ll visit a nearby spot to try handmade loukoumades (Greek donuts) topped with monovarietal honeys, praline, and traditional spoon sweets like black cherry and grape. At another cozy location, you’ll savor Greek yogurt paired with different honeys, discovering how each enhances the yogurt’s creamy richness. • We’ll finish back at the shop, where I’ll answer your questions, share tips, and help you find your favorite flavors. You’ll leave with a small jar of honey, handmade soap, and sweet memories, along with a deeper appreciation for Greece’s culinary traditions.

Bake a Greek breakfast pie with a celebrated chef

The scent of smoldering coals and freshly baked dough fills the air as we gather to embrace one of Greece’s most time-honored traditions: making Greek breakfast pie. This isn’t just a cooking class but a journey—from kneading the dough to baking over an open fire, every step is a story in and of itself. • Upon arrival at Akra, I’ll walk you through our restaurant and bakery, where we’ll discuss the philosophy of using seasonal, organic ingredients in Greek cuisine. • Next, we’ll prepare the fire together, learning how to control heat for baking over hot coals. Make your own dough from scratch and roll it out. • Together, we’ll prepare a seasonal hortopita (wild greens pie), assembling both a large communal pie and personal mini pies. As they bake, you’ll learn about the significance of fire cooking, ingredient selection, and time-honored baking methods. • Once they are golden and crisp, we’ll plate the pies with fresh eggs and artisanal cheeses and then enjoy them together. With every bite, you’ll taste not just the ingredients, but the heritage and hospitality that make Greek food truly special.

Visit local streets and see, taste and shop for cheese, cured meat, fruits, sweets and spices in the markets full of colour, scents and noise. Sample olives, oil and honey from a farmer and local barrel wine made on the tavernas premises. On tours starting at 3.00pm , the fish and meat market are starting to close so we go quickly to see as much as possible. On Sundays and weekly tours starting after 3.30pm markets ARE SHUT so on this tour we will visit a taverna and eat traditional Athenian food and go to a spice shop and a honey and olive oil producer to taste these amazing products! We will enjoy a fantastic deli with a cured meat and cheese tasting and sample Greek coffee and fruits from a local producer. Many tastings offered including sit down meals of meat and fish on all our tours, as you learn about Greek culture from people who live it daily. You will have many friends in Athens at the end of this experience! Vegetarian, vegan and gluten free options are available however, vegan options NOT available on Sundays. We will introduce you to the vendors of our favorite local shops, share traditional breakfast delicacies, smell and learn about herbs and spices, visit a deli shop to taste the original honey glazed yoghurt and take you to the magical world of olives. Also, one of the best Greek traditional restaurants (mageirio) will be accommodating you for a seated lunch and of course, dessert. During the walk, you'll meet our old friends in the oldest vegetable, fish and meat market of Athens and you'll also try our best wines and distillates of the region. Get the chance to know how to cook all the dishes you will try, and get local insight into recipes, tips for Athens, the islands and the culinary traditions. Join us in a “Mediterranean Diet” food tour and discover the secrets of our Greek food. In this traditional 5-course cooking experience, you will learn how to make some of the most authentic Greek dishes, such as the Greek Moussaka and the classic Greek phyllo dough Spanakopita (Spinach pie), by opening your own phyllo. We will also prepare a variation of the well-known Greek Salad inspired by the Greek islands and the famous Greek yogurt Tzatziki sauce. Our dessert will be the original homemade Galatopita (Milk pie). We'll start preparing the ingredients we will need, while talking about Greek and Mediterranean cuisine. When the dishes are ready, we will savor our meal together at the patio admiring the Acropolis Monuments and the eternal Parthenon temple, overlooking the dome of Aghios Dimitrios church. Our kitchen is a few steps away from Monastiraki Square in the funky neighborhood of Psirri. We will meet on the rooftop terrace and cook with amazing views of the vivid center of Athens.
